When good tomatoes go bad
Author: Teresa, Category: Uncategorized
Every year right about now, my tomato plants go berserk. You see, every spring, I feel the need to plant a ridiculous number of tomato plants to ensure that, come late summer, I will have enough tomatoes. Usually this is only two or three plants of each variety of tomato. I learned my lesson the year I planted four of each variety — a total of 20 plants. Eeps. This year I limited myself to one plant of each variety, but I either lucked out or the plan backfired, because I had three extra grape tomato plants pop up where I had planted them last year.
Anyhoo, they’re all ripening at once, and so every day I have to go out and pick tomatoes. Then I have to figure out what to do with them. I’ve made every pasta dish containing tomatoes that I can think of. I don’t really want to spend the time it takes to can them. Short of opening a farm stand in front of my house or randomly leaving them on people’s doorsteps, I’m stumped. Any suggestions for what to do with too many tomatoes?
